It's a popular summer stamina food in Korea. Today, I'm sharing a samgyetang recipe. Samgyetang (삼계탕, 蔘鷄湯) means ginseng chicken soup and it is a popular stamina food in summer. Korean ancestors believed that you can supplement your lost energy by having this soup.

Every year, from the start of July through the end of September, we get hit with a streak of heavy rains and humid heat. This heat and humidity causes many elderly people to feel tired, lazy and weak. So its customary to re-energize with a bowl of piping-hot chicken soup.

Pan fry the chicken on a dry pan, until chickens are fully cooked and the chicken skin is nice golden brown crispy and, about 3 to 4 minutes each side. Set aside and keep it warm. Remove all solid ingredients form the soup and add 3 cups water. Bring back to boil. Add garlic, onion and potato.

1. In a wok (or pot), heat the oil (1 tbsp) over medium-high heat. Once it gets nice and hot, add the chicken and cook for 3 to 4 minutes. 2. Knife-cut noodles (optional) For the noodles, mix flour, potato starch, and salt in a medium bowl. Slowly add in half of the water, and gently mix in with a spoon. Add in the rest of the water, and mix all together, adding more water if needed to form the dough. Knead for about 10-15 minutes until the dough is smooth.

Add onion, scallion, garlic, and ginger. Bring it to a boil over medium high heat. Add the chicken breast, and when it comes to a boil again, reduce the heat to medium low. Stuff each chicken with glutinous rice (4 tbsp), 3-4 garlic cloves, 1 ginseng, and 2 jujubes. Add more or less depending on the size of your chickens. Close the cavity with toothpicks and tie the legs together with kitchen string. 2. In a pressure cooker (or instant pot), add the chickens, green onions, garlic, and Samgyetang herbal kit.

MAKE DAK KALGUKSU. 1. In a wok (or pot), heat the oil over medium-high heat. Once it gets nice and hot, place the chicken skin-side down. Cook for 4 minutes or until the chicken is nicely browned on the bottom. 2. Flip the chicken pieces. Add the sliced onion and saute for 4 to 5 minutes.
